Baked Potato Soup
Ingredients: 2/3 cup margarine 2/3 cup flour 7 cups milk 4 large potatoes, baked and chopped 1/4 cup onion, chopped 12 strips bacon, cooked and crumbled 1 1/4 cup cheddar cheese, shredded 1 cup sour cream 3/4 teaspoon salt 1/2 teaspoon pepper 1 tablespoon fresh or dried chives
Directions:
In a 4 quart kettle, melt the margarine and stir in flour till smooth. Add milk, stirring constantly, till thick. Add potatoes and onions. Bring to boil, stirring constantly. Reduce heat and let simmer for 10 minutes. Add the bacon, cheese, sour cream, salt, pepper and chives. Stir until the cheese melts. --
