Hearty Tortellini Soup Best of Bridge "That's Trump" page 78 Great family meal. Don't forget the crusty buns.
1 medium onion, chopped 2 stalks celery, chopped 3 carrots, chopped 3 garlic cloves, minced 1 Tbsp. margarine 1 - 28 oz.(796 ml) can tomatoes, chopped 1 - 19 oz. (540 ml) can tomatoes, chopped 1 1/2 tsp. sugar 6 cups water 3 Tbsp. chicken bouillon powder 2 Tbsp. parsley 1/4 cup fresh chopped basil or 1 1/2 Tbsp. dried 10 oz. (300 g) veal tortellini, fresh or frozen salt and pepper to taste
Saute onion, celery, carrots and garlic in melted margarine until tender-crisp, about 5 minutes. In a large pot, add tomatoes, sugar, water, chicken bouillon, parsley and basil. Add veggies and bring to boil. Reduce heat and simmer 1 hour. Add tortellini and continue to simmer until tortellini is cooked (about 10 minutes). Add salt and pepper to taste. Serves 8
