Chicken Corn Chowder
From: Peak of the Market (Winnipeg, Manitoba, Canada, 2/23/2017)
Ingredients:
2 tablespoons (30 ml) butter
3 cups (750 ml) chicken broth, divided
2 cups (500 ml) potatoes, diced
1/4 cup (60 ml) flour
1/2 teaspoon (2 ml) salt
1 cup (250 ml) onion, chopped
1 small chicken, cut up
1/2 cup (125 ml) celery, diced
1 2/3 cups (400 ml) cream style corn
3 cups (750 ml) milk
Directions:
1. Melt the butter in a large saucepan.
2. Add the onions & saute until they are tender.
3. Stir in 2 1/2 cups (625 ml) of the chicken broth. Heat to boiling.
4. Add the chicken. Cover the saucepan & simmer for 45 minutes or until the chicken is tender.
5. Remove the chicken from the saucepan. Add the potatoes & celery. Simmer for 5 minutes longer or until the vegetables are tender.
6. Remove the bones & skin from the chicken. Dice the meat.
7. Mix the flour with the remaining 1/2 cup (125 ml) of chicken broth until the mixture is smooth. Add this mixture to the soup.
8. Cook over medium heat, stirring constantly until smooth & the mixture has thickened.
9. Add the chicken, corn, salt & milk. Heat through thoroughly.
Serves 8
