BARBECUE STEW
1/3 pound smoked pork (butt or shoulder) -- smoked
1 medium onion -- chopped
1 quart tomatoes, canned
2 tablespoons Worcestershire sauce
1 cup catsup
1 tablespoon Texas Pete Hot Sauce
1 Bay leaf
3 tablespoons bottled chili sauce
1/4 teaspoon dry mustard
1 dash cayenne pepper
2 tablespoons vinegar
1 small can butter beans
1 small can corn
3 medium potatoes -- diced
1 quart water
2 tablespoons BBQ Sauce
1 tablespoon soy sauce
Put every thing except the beans and corn In a large pot. Simmer for 2 1/2
hour stirring occasionally until the potatoes are nearly done add vinegar
and
vegetabless. Simmer until potatoes are done. Remove Bay leaf before
serving.
