Clam Sauce
1 small white onion, finely chopped 1 tablespoon minced garlic 1/4- 1/2 teaspoon crushed red pepper 4 tablespoons olive oil 1 1/4 cup dry white wine 4 6.5 ounce cans chopped clams, drain, but reserve juices, and rinse 2 tablespoons butter salt and pepper 2 tablespoons fresh parsley, chopped Parmesan cheese
Cook onion, garlic and red pepper flakes in olive oil, until onions are translucent. Add wine and simmer for 1 minute. Then add clams, reserved clam juice and butter. Let simmer for a 2-3 minutes. Taste and then season with salt and pepper. Serve with pasta, garnishing with chopped parsley and Parmesan.
