Creamed Spinach Casserole
From: Peak of the Market (Winnipeg, Manitoba, Canada, 12/29/2018)
Ingredients: 1 lb (455 g) frozen chopped spinach, thawed 1/3 cup (75 ml) onion, chopped 1 can cream of mushroom soup 1/2 cup (125 ml) sour cream 1/2 cup (125 ml) mayonnaise 3 eggs 1 cup (250 ml) Parmesan cheese, shredded 1 cup (250 ml) mozzarella cheese, shredded
Directions: 1. Microwave the spinach & onion for about 2 minutes. Drain in a colander to get as much of the liquid out as possible. 2. In a large bowl, add the cream of mushroom soup, sour cream, mayonnaise, eggs & most of the cheese, reserving a little for the topping. 3. Mix together with the spinach & onion. 4. Spray an 8 x 8 inch (20.5 x 20.5 cm) casserole dish with cooking spray. Pour in the mixture. 5. Sprinkle the top of the casserole with the remaining cheese. 6. Bake in a preheated 375ºF (190ºC) oven for 35 minutes or until it is lightly browned.
