Slow Cooker Parmesan Herb Chicken and Orzo Recipe
Ingredients 4 boneless, skinless chicken breasts or 6-8 boneless, skinless chicken thighs 3 teaspoons Italian seasoning, divided 3 cups low-sodium chicken broth 1 1/2 cups orzo pasta 4 tablespoons butter, melted 1 cup mushrooms, sliced 1 medium white or yellow onion, finely chopped 2 teaspoons garlic, minced 1 teaspoon salt, to taste 1/4 teaspoon black pepper, or to taste 1/2 cup Parmesan cheese, shaved or finely shredded Freshly cracked black pepper and herbs for garnish
Instructions Season chicken on both sides with Italian seasoning, salt and pepper. Brown 1-2 minutes in a large non-stick skillet. Transfer chicken to a greased slow cooker. Add broth, mushrooms, butter, onions, garlic and salt and pepper. Cover and cook on high 1-2 hours, or on low for 3-4 hours. Remove lid and add in orzo. Cover and cook on high for 30-45 minutes. Remove lid and lift out chicken and set aside. Stir remaining ingredients and replace chicken on top of mixture. Sprinkle mixture with Parmesan cheese and replace lid. Cook on high for 5-10 minutes, or until cheese is melted. Serve with fresh herbs and cracked pepper.
