Zucchini Soup
From: Peak of the Market (Winnipeg, Manitoba, Canada, 3/15/2017)
Ingredients: 1 1/2 lbs (685 g) zucchini, sliced 1 medium onion, sliced 1 minced garlic clove 1/2 cup (125 ml) butter or margarine 3 1/2 cups (875 ml) chicken broth 1/4 teaspoon (1 ml) dried dill seed 1/4 teaspoon (1 ml) dried basil 1/4 teaspoon (1 ml) dried sage 1 cup (250 ml) milk or cream salt & pepper to taste
Directions: 1. In a large pot, saute the zucchini, onion, garlic & butter together until they are soft. 2. Add the chicken broth to the zucchini mixture & leave to simmer for 15 minutes. 3. Add the dill seed, basil & sage. Cool the mixture. Blend the mixture in a blender or food processor. 4. Place the zucchini mixture in the refrigerator for approximately six hours. 5. When you are ready to serve the soup, add the milk or cream. And, add some salt & pepper to taste. 6. Heat the soup to your desired temperature to serve.
