Ingredients --5 ounces bacon (4 to 5 strips), cut into 1/4-inch pieces --1 large Vidalia or other sweet onion, diced --1 pound okra, trimmed and cut into 1/2-inch-thick rounds --1 1/2 teaspoons kosher salt --1/2 teaspoon freshly ground black pepper --2 large tomatoes, cored, seeded, and cut into 1/2-inch pieces
Directions 1} In a large cast-iron skillet, cook the bacon over medium heat for about 8 minutes, until crispy. Use a slotted spoon to transfer the bacon to a plate lined with paper towels; set aside.
2} Add the onions to the bacon drippings in the skillet and cook, stirring often, until caramelized, about 5 minutes, then remove and set aside along with the bacon.
3} Add the okra to the skillet along with the salt and pepper. Cook for 10 to 12 minutes, stirring once gently, until the okra is tender.
4} Add the bacon, onions, and tomatoes and cook for an additional 2 minutes. Serve warm.
