1 stick melted unsalted butter
2 cups crushed graham crackers
4 eggs*
1 2/3 cups of granulated sugar*
1 cup vegetable oil *
15 oz can of pumpkin puree*
2 cups all-purpose flour*
2 tsp ground cinnamon*
1 tsp salt*
1 tsp baking powder*
1 tsp baking soda*
12 oz bag semi sweet chocolate chips
10.5 0z bag mini marshmallows
Instructions
Preheat oven to 350 degrees. Melt butter and mix well with your graham crackers. Grease a 9×13 pan (FFM tip- I use Pillsbury baking spray with flour and it has never failed me, I also make tiered cakes and I use it with them and they come out perfect every time, its inexpensive and works great) spread your buttery graham crackers onto the bottom of your greased pan. press down to make them flat and even. bake for 7-9 mins.
Meanwhile mix together your dry ingredients. Flour, baking powder, baking soda, salt and cinnamon. set aside. Mix together in an electric or using a hand mixer the eggs and sugar until well combined. then add your pumpkin and vegetable oil. slowly add your dry ingredients to your pumpkin mixture. Now pour your pumpkin mixture on top of the layer of cooked graham crackers. Bake for 30 min. Take it out and test it, if it cooked all the way add your whole bag of chocolate chips and marshmallows. Turn your oven on to broil at 450 degrees. Broil the top for about 2-3 min or until your marshmallows are golden brown. Let it cool slightly before cutting. Serve warm with a big glass of milk or cup of coffee and enjoy!!!
Freezer Friendly Mom tips
To freeze: Follow the instructions until adding the chocolate and marshmallows. Let the bars cool and remove from the pan. Label and freeze. You can always cut them in to bars and freeze individually and add toppings to each one when thawed. Yum
To eat: Defrost overnight. Preheat your oven to 250 degrees. I left mine in there for about 40 min just to warm it. Turn on your broiler to 450 degrees. Then I added my bag of chocolate and marshmallows to the top. Broil until the chocolate is melted and mallows are melted and golden brown on the top!!
