EASTER PIZZA
1 1/2 lb. Ricotta cheese 1/2 lb. farmer cheese 2 oz. grated Parmesan cheese 6 eggs 3/4 lb. Prosciutto, cut in small pieces salt and pepper
Crust: 2 c. sifted flour 4 Tbsp. butter (unsalted), cut into bits 1/2 tsp. salt 2 eggs 3 Tbsp. milk or enough to make soft dough
Mix cheeses, eggs, Prosciutto, salt and pepper in large bowl. Cut butter into flour and add the salt, eggs and milk a little at a time. Knead together. Break into two pieces and roll out one piece to fit a 9 x 13-inch pan. Lay dough in pan and brush with slightly beaten egg white. Pour in cheese mixture. Trim edges and make a lattice top crust. Brush with beaten egg yolk. Bake at 350 degrees for 1 hour or until golden brown.
